  1. 1 lb. ground turkey

  2. 1/4 cup flavorful olive oil

  3. 1 green pepper, chopped

  4. 1 onion, chopped

  5. 2 scallions, chopped

  6. 2 tbsp. chili powder

  7. 1/2 tsp. ground cumin

  8. 1 tsp. paprika

  9. 2 tbsp. red wine vinegar

  10. 2 cups chopped fresh or drained canned tomatoes

  11. 2 cups canned white beans or red kidney beans

  12. 4 cups water or canned homemade chicken broth Shredded lettuce, sliced avocado and shredded Monterey Jack cheese, as optional garnishes

  1. Brown turkey in large kettle in 2 tablespoons olive oil, crumbling with a fork until well cooked. Drain turkey with slotted spoon and reserve. Add remaining olive oil to kettle, heat over moderate heat and add all vegetables. Saute until vegetables are tender. Add chili powder, cumin, paprika, vinegar and water. Cover and simmer for 45 minutes, stirring often. Add tomatoes, cook for 15 minutes. Add beans and reserved turkey and cook for an additional 10 minutes. Mash some beans with a fork or potato masher if a thicker consistency is desired. Garnish with shredded lettuce, sliced avocado, or shredded Monterey Jack. Makes 6 to 8 servings.
