  8. 3 cups radicchio

  9. --cut into chiffonade

  10. 1/4 cup lemon vinaigrette

  11. 1 dash mayonnaise or not -- as you wish

  12. 12 ounces sea scallops -- food removed

  13. --sliced in half horizontally

  14. minced chives

  15. Prepare the radicchio, vinaigrette (mixed with a touch mayonnaise or not,

  16. as you wish) and chives finely chopped.

  17. Right before serving, set scallops in a wide skillet; barely cover with

  18. water and just bring to a simmer, cover and simmer one minute. Remove from

  19. heat and pat dry.

  20. Mix warm scallops and radicchio together and set on dinner plate. Drizzle

  21. dressing over top and garnish with chives.

  22. Yield: 2 servings
