  1. 1 teaspoon 5ml Kosher salt

  2. 1 teaspoon 5ml Ground hot red chile pepper

  3. 1 teaspoon 5ml Whole black mustard seeds

  4. 1 teaspoon 5ml Black peppercorns

  5. 3 Juniper berries

  6. 1 tablespoon 15ml Peanut oil

  7. 1 tablespoon 15ml Apple cider vinegar

  8. 1 tablespoon 15ml Brown sugar

  9. 1 tablespoon 15ml Clove garlic, minced (large)

  1. Pound everything in a mortar (or pulse in a food processor) until it's a thick paste. If necessary, add a little hot water to thin to the consistency of bottled grainy mustard. Work the result evenly into the meat and let sit 1/2 hour or so before cooking. Recipe makes enough for 3 racks of baby backs.
