  1. 1 tablespoon 15ml Onion powder

  2. 3/4 teaspoon 3.8ml Black pepper

  3. 1/4 teaspoon 1 1/3ml White pepper

  4. 1 tablespoon 15ml Salt

  5. 1 tablespoon 15ml Thyme

  6. 1/2 teaspoon 2 1/2ml Annatto powder - (for color)

  7. 2 teaspoons 10ml Hungarian paprika

  8. 1/4 teaspoon 1 1/3ml Sage

  9. 1/4 teaspoon 1 1/3ml Rosemary

  10. 1 teaspoon 5ml Ancho/pasilla chile - powdered

  1. Put ingredients in mortar and grind. Store in tightly-sealed jar. To duplicate the texture of this seasoning blend, do not run it through a spice grinder. In the original Paul Prudhomme Seafood Magic, there are larger bits of rosemary and other herbs.
