  1. 2 chilled firm-ripe California avocados

  2. 1 1/2 tablespoons fresh lemon juice

  3. 3/4 cup whole milk

  4. 1/2 cup sugar

  5. 1/2 cup well-chilled heavy cream

  1. Halve and pit avocados and scoop flesh into a food processor. Add lemon juice, milk, sugar, and a pinch salt and puree until completely smooth. In a bowl beat cream until it just holds stiff peaks. Fold avocado mixture into whipped cream gently but thoroughly.
