  2. RED POTATO CASSEROLE

  6. 2 c Chopped fresh tomatoes

  7. 2 c Peeled, cubed red potatoes

  8. 1/2 c Diced red onions

  9. 1/4 c Extra virgin olive oil

  10. 1 tb Chopped fresh basil

  11. 2 tb Finely chopped fresh parsley

  12. 2 ts Dried oregano

  13. 1/4 c Water

  14. 1/2 ts Paprika

  15. 3/4 ts Salt

  16. 1/2 ts Freshly ground black pepper

  17. 2 c Diced baked tofu or - firm tofu

  18. Combine all the ingredients in a casserole dish and mix well. Cover and bake in a preheated 425 degree F

  19. 45 minutes. Yield:

  20. 2 servings.

  21. PERSONAL NOTE: I have no idea what is meant by baked

  22. tofu, and could find no reference to it in the Index.
