  2. 1 teaspoon vegetable oil

  3. 1 teaspoon round coriander

  4. 1/2 lemon -- juice of

  5. 1/4 cup water chopped fresh cilantro -- or parsley -- as garnish

  1. Preparation : Saute carrots in oil in nonstick pan until golden. Add coriander, lemon juice, and water. Bring to a boil and simmer until carrots are tender-crisp. Watch this carefully; carrots burn easily if the heat is too high. Garnish.
