  1. 1 1/2 Pounds asparagus -- trimmed

  2. 2 1/2 Cups nonfat cottage cheese

  3. 4 Ounces part-skim Mozzarella cheese

  4. 1 green onion -- chopped

  5. 1/2 Cup fresh parsley

  6. 1 egg

  7. 3 egg whites

  8. 1 Teaspoon mustard

  9. 1 1/2 Tablespoons grated Parmesan cheese

  10. 10 inch quiche pan with nonstick cooking spray. Cut asparagus into 2 inch pieces. Steam until tender, about 5 minutes. Cool and chop. Puree cottage chees e, Mozzarella, onion, parsley, egg, egg whites and mustard in processor. Fold i n chopped asparagus. Pour into prepared quiche pan. Sprinkle with Parmesan. Bak e in preheated
