  1. 1 large onion, finely chopped

  2. 1 tablespoon olive oil

  3. 2-4 cloves garlic, crushed

  4. 900g beef mince, good quality

  5. 1-2 tablespoons tomato paste

  6. 1/2 cup fresh breadcrumbs

  7. 1 whole egg

  8. 1/2 bunch fresh parsley, picked and chopped finely

  9. salt and pepper

  10. cooking spray or 1-2 tablespoons olive oil

  11. 4 slices sliced bacon

  12. 1 small onion, sliced thickly

  13. 6 good quality sesame seed buns, (can be kept frozen- best if frozen fresh)

  14. 1/2 cup whole-egg mayonnaise

  15. 12 iceberg lettuce leaves, separated and washed

  16. 6 slices tasty cheese

  17. small can sliced beetroot

  18. 2-3 ripe salad tomatoes, sliced

  19. 2-3 whole large gherkins, sliced or 1 jar sliced pickles

  20. 1/3 cup tomato sauce

  1. In a medium pan combine onions and olive oil. Cook until soft, add garlic and cook further 1-2 minutes. Cool.

  2. In a large bowl, combine beef mince with tomato past, breadcrumbs, egg, and parsley. Add cooked onion and garlic. Season well with salt and pepper. Combine with hands until thoroughly blended.

  3. Divide mixture into 12 even portions. Shape into round, flat (1cm thick) discs or "patties" and stack on a small tray, placing sheets of plastic (go-between or freezer bags) in-between.

  4. Use fresh or cling-wrap and freeze. If the patties are thin, and have plastic between them, they can be cooked directly from the freezer.

  5. Pre-heat BBQ flat plate or a non stick pan to med/hot.

  6. Spray pan with cooking spray or add olive oil when hot.

  7. Cook patties 4-5 minutes each side, a little longer if frozen. Place bacon on same grill and cook until browned and cooked through. Add onion slices and cook until tender When patties are almost done, toast the cut side of the buns on the same grill plate (the inside of the bun should be toasted and the outside should be soft).

  8. To assemble, spread a little mayonnaise on each side of the bun.

  9. Starting with the bun base, build hamburger in the order of. Lettuce, patty, cheese, bacon, tomatoes, patty, beetroot and gherkins. Top with 2 teaspoons of tomato sauce and place the top of the bun on.

  10. Serve immediately.
