  1. 2 lb Fish fillets, cut into -pieces

  2. 1 lb Shelled shrimp

  3. 2 Softshell turtles, cleaned

  4. -and parboiled until tender.

  5. -Cut into Small pieces

  6. 6 Blue crabs, boil and remove

  7. -meat, or one 7-1/2 oz. can

  8. -crabmeat

  9. 12 Clams or one 

  10. 7-1/2 oz. can

  11. -chopped clams

  12. 1 md Onion, sliced and 

  13. 1/2 cup

  14. -diced green onions

  15. 1/2 c Chopped celery

  16. 1/2 c Green pepper

  17. 1/2 c Sliced mushrooms

  18. 1/4 c Chopped parsley

  19. 2 One lb. cans tomatoes

  20. 2 Cloves minced garlic

  21. 1/2 ts Thyme

  22. 1/2 ts Saffron

  23. 2 Bay leaves

  24. 1/2 c Oil

  25. 1 c White wine

  26. Hot sauce to taste

  27. 2 c Fish stock

  1. This is a Florida chowder… it goes real good with ‘french’ bread.

  2. Saute vegetables in oil until soft, about 10 minutes. Add wine, stock, tomatoes and bring to a boil. Add fish and remaining ingredients. Cook over medium heat for 15 minutes. Turn on low and simmer for 20 minutes.
