  1. 1 lemon (zest of)

  2. 2 tablespoons lemon juice

  3. 2 tablespoons white wine vinegar

  4. 2 tablespoons Splenda sugar substitute

  5. 1 tablespoon olive oil

  6. 1 teaspoon poppy seed

  7. 1/4 cup sliced almonds, toasted

  8. 2 cups strawberries , quartered

  9. 1 medium cucumber , sliced and cut in half

  10. 1/2 cup red onion , chopped finely

  11. 6 ounces mixed spring greens

  1. For dressing, zest the lemon and squeeze 2 T of juice from lemon. Combine lemon zest and juice, vinegar, splenda, oil and poppy seeds with wire whisk.

  2. In a large bowl combine salad ingredients. Toss with poppyseed dressing, serve immediately.
