  1. 2 cup(s) sugar

  2. 1 cup(s) butter

  3. 4 eggs , separated

  4. 1 cup(s) milk

  5. 3 cup(s) flour

  6. 4 teaspoon(s) baking powder

  7. 1/2 teaspoon(s) salt

  8. 1 teaspoon(s) vanilla extract or almond extract

  9. Frosting , (see step 4 below)

  1. Cream sugar and butter together. Add egg yolks, then the milk, alternately with sifted dry ingredients. Beat egg whites until stiff peaks form. Fold beaten egg whites and extract into yolk mixture. Bake in two 9-inch greased cake pans in preheated 350 degrees F. oven for 35 to 40 minutes.

  2. Cool cakes in pans on wire rack 10 minutes; remove from pans and cool.

  3. Prepare Frosting. Spread some frosting on layers as filling and spread remaining frosting to ice the whole cake.


  5. In 3-quart saucepan over very low heat, with electric hand mixer at medium speed, beat 2 egg whites, 1 1/2 cups sugar, 1/3 cup cold water, 1/2 teaspoon almond or vanilla extract, and 1/8 teaspoon salt until stiff peaks form, about 15 minutes. Immediately remove saucepan from heat. Stir in 1 cup chopped raisins, 1 cup chopped walnuts, and 12 dried figs, finely cut.
