  5. 1 cn Great Northern beans; drain

  8. 3 Carrots; peeled and diced

  9. 2 Stalks celery; sliced

  10. 1 lg Onion; chipped

  11. 2 -3 garlic cloves; minced

  12. 1 ts Dried oregano leaves

  13. 1/2 ts Dried basil

  14. 1 Bay leaf

  15. Salt and pepper

  16. 6 -7 fresh tomatoes; cut into -large pieces <<OR>>

  17. 1 cn Tomatoes; cut into large

  18. -pieces, reserve liquids

  19. -(28 oz) 7 oz -8 oz. shell macaroni

  20. Parmesan cheese; grated

  21. Saute' the carrots, celery, onions and garlic in hot

  22. olive oil in a large skillet. Add the oregano, basil,

  23. 1/2 tsp. salt and 1/4 tsp. pepper and the bay leaf.

  24. Cover and cook over low heat about 1/2 hour. Add half

  25. the tomatoes, cover and cook 10-15 minutes. Meanwhile,

  26. cook the macari in boiling salted water until just

  27. barely tender. Combine the beans, cooked vegetables

  28. and macaroni in a large pot. Add water to reserved

  29. bean and tomato liquids to equal 1 cup; add to pot

  30. with remaining tomatoes. Simmer another 10-15 minutes,

  31. stirring occasionally and adding more salt and pepper

  32. if necessary. Remove bay leaf before serving with the

  33. Parmesan cheese. Serves 6-8.

  34. *This would equal approximately 3/4 cup dried beans;

  35. soak and cook according to package directions. Note:

  36. Navy or pea beans work equally well. --
