  1. 4 cups 948ml Potatoes*

  2. 1/2 teaspoon 2 1/2ml Salt

  3. 1/3 cup 20g / 0.7oz Onion - chopped

  4. 2 tablespoons 30ml Lemon juice

  5. 2 cups 474ml Chicken broth**

  6. 1/4 cup 59ml Vegetable oil

  7. 1/2 teaspoon 2 1/2ml Sugar Pepper - as desired

  1. Recipe Instructions * Potatoes should be peeled and sliced 1/4-inch thick** Chicken broth may be either home made or commercial Boil potatoes in broth with 1/4 tbs salt for 5 to 8 minutes, until tender. Drain. Toss warm potatoes with vegetable oil and onions. Dissolve remaining 1/4 tbs salt and the sugar in lemon juice. Pour over potatoes. Marinate salad 1 to 2 hours before serving. Serve at room temperature.
