  1. 2 cups chocolate cookie crumbs

  2. 1/4 C unsalted butter, melted Ganache Filling:

  3. 20 ounces bittersweet chocolate, chips or a chopped block

  4. 2 cups heavy cream

  5. 3 tablespoons unsalted butter

  1. For the Crust: 1. Preheat oven to 350 degrees.

  2. Spray a 9 inch fluted tart pan with pan spray.

  3. Combine melted butter and cookie crumbs in a medium sized bowl and mix until moistened.

  4. Press into tart shell. Bake for 5 minutes. Ganache Filling: 1. Place chocolate in a large bowl.

  5. Heat the cream and butter to a boil over medium heat. Pour cream over chocolate and let sit for 5 minutes.

  6. After 5 minutes, whisk the chocolate and cream mixture together until incorporated. Once smooth, pour into chocolate crumb shell. Cool until set, about 3 hours in the refrigerator.

  7. Cut and serve with whipped cream and caramel sauce.
