  1. 1 cup leftover beef -- thinly sliced

  2. 6 medium potatoes -- boiled and sliced

  3. 4 tomatoes -- peeled and sliced

  4. 1 teaspoon salt

  5. 1/4 teaspoon pepper

  6. 2 tablespoons wine vinegar

  7. 4 tablespoons vegetable oil

  8. 1/2 teaspoon dried tarragon leaves

  9. 1 tablespoon chopped parsley

  10. 2 hard-boiled eggs -- sliced
