  2. 1 cup sake

  3. 3/4 cup soy sauce

  4. 1/4 cup sugar

  5. 1 1/2 tbsp. peeled, minced fresh ginger

  6. 1 tsp. grated lemon peel

  7. 6 salmon fillets, about 6 to 8 unces each

  1. Prepare the grill. Combine the sake, soy sauce, sugar, ginger and lemon peel in a small saucepan. Heat to a simmer over medium heat, stirring to dissolve the sugar. Reduce te heat to low and simmer 10 minutes. Arrange the salmon fillets skin side down on an oiled grill rack. Brush the salmon generously with the sake mixture. Grill the salmon about 8 minutes without turning until cooked through, basting every 2 minutes with the sake mixture. Serve the salmon immediately.
