  1. Peanut Butter Cookies

  2. 2 3/4 lbs. quick or old fashioned oatmeal, uncooked

  3. 7 1/2 cups all purpose flour

  4. 2 1/2 tsp. baking soda

  5. 3 3/4 cups unsalted butter, softened

  6. 5 cups peanut butter

  7. 7 1/2 cups brown sugar, firmly packed

  8. 1 2/3 cups water

  9. 5 eggs

  10. 1 Tbs. plus 2 tsp. vanilla extract

  11. 1 1/4 cups granulated sugar

  12. Combine first 3 ingredients in a bowl. Beat together butter and next 2 ingredients in another bowl until light and fluffy. Blend

  13. in water, egg and vanilla. Add dry ingredients and mix well. Chill

  14. 1 hour. Preheat oven to

  15. 350F. Shape dough to form

  16. inch balls. Place on an ungreased cookie sheet and flatten with

  17. tines of a fork dipped in granulated sugar to form a crisscross

  18. 9-10 minutes or until edges are golden. Cool

  19. 1 minute

  20. on cookie sheet and remove to wire cooling rack. Makes about 7

  21. dozen cookies.

  23. size pan, it adjusts the number of servings only in multiples of
