  1. 1/4 cup 40g / 1.4oz Raisins

  2. 1/4 cup 59ml Pine nuts

  3. 3 tablespoons 45ml Olive oil

  4. 1 tablespoon 15ml Onion - chopped (small)

  5. 2 lbs 908g / 32oz Spinach - stems removed,

  6. And carefully washed

  7. Salt - to taste

  8. Freshly-ground black pepper - to taste

  1. Place the raisins in a bowl, add hot water to cover, and let stand until plumped, about 20 minutes.

  2. Meanwhile, preheat an oven to 350F. Spread the pine nuts in a small pan and place in the oven until toasted and fragrant, 8 to 10 minutes. Set aside.

  3. In a wide saute pan over medium heat, warm the olive oil. Add the onion and saute until tender, about 10 minutes. Add the spinach to the pan and stir constantly until it is wilted, about 4 minutes.

  4. Drain the raisins and add them to the pan along with the pine nuts. Season to taste with salt and pepper, stir well, and serve hot.

  5. This recipe yields 4 servings.
