  2. Old Fashioned Spiced Tomato Preserves

  7. 3 cups prepared tomatoes -- (2 1/4 lb.)

  8. 1/4 cup lemon juice

  9. 4 1/2 cups sugar

  10. 1 box sure-jell fruit pectin

  11. 1 1/2 teaspoons grated lemon rind

  12. 1/2 teaspoon cinnamon

  13. 1/2 teaspoon allspice

  14. 1/4 teaspoon ground cloves

  15. Scald, peel and chop tomatoes. Cover and simmer 10 minutes, stirring occasiona

  16. 3 cups into a 6 or 8 quart saucepot. Add lemon juice, grated lemo

  17. n rind, allspice, cinnamon and ground cloves to tomatoes. Measure sugar and se

  18. t aside.

  19. Stir sure-jell fruit pectin into prepared tomatoes. (Saucepot must be no more

  20. 1/3 full to allow for a full rolling boil.

  21. gh heat, stirring constantly. At once stir in sugar. Stir and bring to a full

  22. rolling boil (a boil that cannot be stirred down). Then boil hard 1 minute, s

  23. tirring constantly. Remove from heat.

  24. Skim off foam with large metal spoon. Immediately ladle into hot sterilized j

  25. ars, leaving 1/4 inch space at top. With a damp cloth, wipe jar rims and threa ds clean.

  27. ol. Check seals. Store jam in a cool dry place. Yield: approximately 5 cups.
