  1. 1/4 cup olive oil

  2. 1 large white onion , cut into 1/2-inch cubes

  3. 1 tablespoon minced garlic

  4. 1 chopped green pepper

  5. 1 cup chopped canned tomato es

  6. 1 tablespoon paprika

  7. 1 tablespoon dry oregano

  8. 1 tablespoon dry cilantro

  9. 1/2 pounds beef top round, cut into 1-inch cubes

  10. 1 cup dry Sherry

  11. 4 large peeled potato es, cut into 1-inch cubes

  12. Salt and white pepper

  13. 2 Lime s, Sliced into wedges

  14. Bottle of hot sauce , on the side

  1. In a heavy skillet, heat oil and saute onions for 5 minutes. Add garlic, peppers, tomatoes, spices, and meat and saute for 5 more minutes. Add Sherry and simmer, uncovered, 5 minutes. Add potatoes and enough water to cover meat and potatoes. Let simmer until the potatoes are tender, about 25 minutes. Season with salt and pepper.

  2. Serve each bowl with hot sauce, and squeeze a wedge of lime into bowl then place into bowl and mash, letting all the juices flow.

  3. Can be served with white rice.
