  5. 4 c Flour, all purpose;

  6. 5/8 c Milk; or warm water;

  7. 150 ml

  8. 2 tb Yogurt

  9. 1 tb Yeast,dried

  10. 1 ts Sugar

  11. 3 tb Ghee; or butter

  12. 2 tb Poppy seeds

  13. 1 tb Sesame seeds

  14. --VARIATION: BADAMI NAAN--

  15. 2 c Almonds; blanched finely &

  16. -shredded

  17. White sesame seeds

  18. Sprinkle yeast and sugar into the hot milk or water,

  19. leave it for 20 minutes. Sift together flour, dalt in

  20. a large bowl, and make a well in the centre. Put

  21. yogurt and 2 tbsp butter in the yeast mixture. Knead

  22. well and leave it aside for 3-4 hours, in a warm place

  23. until doubled in size.

  24. Punch down dough and divide into 8 balls. Let it rest

  25. for 10 minutes. Roll out each ball in the shape of

  26. traignles or make a round disk. then pull on one side

  27. to make a teardrop shape. Mix together 1 tsp ghee or butter, poppy seeds and sesame seeds. Spread a little

  28. of the above mixture on each naan. Place them on a

  29. 375F/

  30. 190C/ gas

  31. 4-5 minutes until brown specks appear.

  32. If the naan is not brown enough then put under a

  33. preheated grill for a minute or two.

  34. VARIATION: BADAMI NAAN

  35. Brush each sada naan with oil or butter before baking

  36. them. Sprinkle almonds and white sesame seeds on the

  37. greased side of every naan. Cook in a preheated oven,

  38. for 4-5 minutes. --
