  1. 6 tablespoons 90ml Butter

  2. 1 1/2 cups 355ml Light cream

  3. 1/2 lb 227g / 8oz Lobster meat - (or more)

  4. 2 teaspoons 10ml Lemon juice Paprika

  5. 2 tablespoons 30ml Flour

  6. 3 Egg yolks - beaten

  7. 3 tablespoons 45ml Dry sherry

  8. 1/4 teaspoon 1 1/3ml Salt Patty shells or toast cups

  1. Recipe Instructions Melt butter in skillet and blend in flour. Add cream all at once. Cook, stirring constantly, until sauce thickens and bubbles. Stir a small amount of hot mixture into egg yolks, return to hot mixture; cook, stirring, constantly, until mixture thickens. Add lobster; heat. Add wine, lemon juice, and salt. Sprinkle with paprika. Serve in patty shells or toast cups.
