  1. 1 cup chopped onion

  2. 2 tablespoons butter or margarine

  3. 3 cups cooked rice*

  4. 1 (10-ounce) package chopped spinach, cooked

  5. 1/2 teaspoon garlic powder

  6. 1/2 teaspoon basil leaves

  7. 1/2 teaspoon ground thyme

  8. 3 large eggs

  9. 1/2 cup freshly grated Parmesan cheese

  1. Cook onion in butter until tender. Add rice, spinach, garlic powder, basil and thyme.

  2. Beat eggs and stir into rice mixture.

  3. Turn into buttered 2-quart casserole. Sprinkle with Parmesan cheese.

  4. Bake at 375°F (190°C) 20 minutes.
