  1. 3 cups College Inn ® Light & Fat Free Chicken Broth 50% Less Sodium

  2. 1 large onion , chopped

  3. 1 Tbsp. butter

  4. 2 lb. plum tomatoes , seeded and quartered

  5. 1 can tomato sauce

  6. 1 Tbsp. minced fresh basil

  7. 1/4 tsp. salt dash pepper

  8. 1 cup dried cheese tortellini

  9. 1/3 cup shredded Parmesan cheese

  1. Directions 1. Saute onion in butter in a large saucepan until tender.

  2. Add tomatoes, broth, tomato sauce, basil, salt and pepper.

  3. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Cool slightly.

  4. Cook tortellini according to package directions; drain well and set aside.

  5. Cover and process soup in a blender in batches until smooth.

  6. Return to the saucepan; add tortellini and heat through.

  7. Garnish with cheese.
