  6. 1/2 c Raisins

  7. 2 c Flour;all purpose

  8. 1 ts Baking powder

  9. 1/2 t Baking soda

  10. 1 ts Cinnamon;ground

  11. 1 ts Nutmeg;ground

  12. 1 pn -Salt

  13. 1 c Butter;unsalted

  14. 1 c Sugar

  15. 3 Eggs

  16. 1 c Applesauce

  17. 1 Lemon rind;of

  18. 1;grated

  19. "Most kids don't like fruit cake, so I have devised a moist version of a

  20. classic gumdrop cake. Freeze the cake until Christmas or refrigerate up to

  21. two weeks."

  22. 350F. Cut the gumdrops into small pieces

  23. kids to do this); leaving out the black ones. In a small bowl, toss with

  24. the raisins and 1/2 c flour. Reserve.

  25. In a separate bowl, combine the baking powder, baking soda, cinnamon,

  26. nutmeg, and salt with the remaining flour.

  27. In a large bowl, cream the butter until light and fluffy. Gradually beat

  28. in the sugar. Beat in the eggs, one at a time.

  29. Stir in the applesauce, flour mixture and lemon rind. Fold in the gumdrop

  30. and raisin mixture.

  31. Butter a 9 X 5 inch loaf pan and line with buttered wax or parchment

  32. paper. Pour in the batter.

  33. 1 to 1 1/2 hours or till knife inserted comes out clean.

  34. Turn out the cake and let it cool completely. Wrap well with foil and 1 to 2 weeks in the refrigerator. Freeze if keeping longer than

  35. weeks. MAKES: 1 loaf --
