  2. LENTIL & TOMATO SOUP

  7. 3 tb Vegetable oil

  8. 2 lg Onions, chopped

  9. 1 sm Garlic clove, crushed

  10. 1 t Rosemary

  11. 1 3/4 c Stock

  12. 8 oz Lentils, cooked

  13. 1 lg Carrot, diced

  14. 1 ea Celery stick, chopped

  15. 14 oz Canned tomatoes, chopped

  16. 1 pn Arame seaweed

  17. 1 t Miso

  18. 1/2 ts Cumin

  19. Salt, to taste

  20. Heat the oil in a soup pot & saute the onions, garlic

  21. & rosemary for 5 minutes. Add the stock, lentils,

  22. carrot, celery, tomatoes & seaweed. Bring to a boil,

  23. reduce heat, cover & simmer for 20 minutes. Blend the

  24. contents till smooth with the miso, cumin & salt.

  25. Reheat & serve hot.
