  1. 1 fresh pineapple - peeled, cored and cut into rings

  2. 60ml coconut milk

  3. 100g caster sugar mixed with

  1. Preheat bbq or oven grill.

  2. Place the coconut milk and cinnamon-sugar mixture into separate dishes. Dip slices of pineapple into coconut milk, then coat in cinnamon sugar.

  3. Cook on bbq grate or under the grill on a baking tray for 5 or 6 minutes on each side. Serve alone or with vanilla ice cream.
