  1. 2 1/2 cups all purpose flour

  2. 1 tsp. baking soda

  3. 1/4 tsp. salt

  4. 1/4 tsp. ground nutmeg

  5. 1 cup butter, room temperature

  6. 1 cup sugar

  7. 1/4 cup unsulfured molasses

  8. 2 large eggs

  9. 1 tsp. vanilla extract

  10. 1 1/2 cups chopped, roasted, unsalted cashews

  11. 1/2 cup white chocolate chips

  1. Sift together flour and baking soda into a medium bowl. Stir in salt and nutmeg. Beat together butter, sugar and molasses in a large bowl until fluffy. Beat in eggs and vanilla. Stir in flour mixture, cashews and white chocolate chips. Refrigerate cookie dough at least 1 hour or overnight.

  2. Preheat oven to 350 degrees. Grease 2 large cookie sheets. Drop dough by rounded tablespoonfuls onto the prepared pans, spacing 2 inches apart. Bake cookies about 12 minutes until golden. Cool on pans 2 minutes. Transfer cookies to racks and cool completely. Store cookies in an airtight container at room temperature.
