  1. 2 cup Dried pinto beans -- washed

  2. 2 cloves Garlic -- minced

  3. 1/2 cup Smoked ham -- chopped

  4. 1/2 cup Chopped bell pepper

  5. 2 Teaspoon Brown sugar

  6. 1/4 Teaspoon Oregano

  7. 1 large Onion -- chopped

  8. 1 Bay leaf

  9. 2 cup Canned chopped tomatoes

  10. 2 Teaspoon Chili powder

  11. 1/2 Teaspoon Dry mustard

  1. Preparation : Cover beans with water and let soak overnight. Drain beans, discarding soaking water. In crock pot, cover beans with fresh water and add remaining ingredients. Cook on LOW for 6-8 hours, until beans are tender. Taste beans, add salt if necessary (don't add salt at the beginning of cooking time - it will make the beans tough!
