  1. 2 lb Flounder or white fish

  2. 2 tb Lemon juice

  3. 1/2 c Parmesian cheese

  4. 1/4 c Butter, softened

  5. 3 tb Mayonnaise

  6. 3 Green onions, chopped

  7. 1/4 ts Salt

  8. 1 Dash of hot sauce

  1. Place fillets in a single layer on a greased, shallow oven-to-table type broiler pan; brush with lemon juice.

  2. Combine next 6 ingredients in a small bowl and set aside.

  3. Broil fillets 4 to 6 minutes or until fish flakes easily when tested with a fork.

  4. Remove from oven; spread with cheese mixture.

  5. Broil an additional 30 seconds or until cheese is lightly browned and bubbly.

  6. Garnish with lemon twists and parsley if desired.
