  1. 1 cup 198g / 7oz Eggplant - cubed

  2. 1/2" (medium)

  3. 2 tablespoons 30ml Water

  4. 2 cups 125g / 4.4oz Tomatoes - chopped

  5. 4 oz 113g Green chiles - chopped

  6. 3 Garlic - crushed

  7. 1/2 cup 31g / 1.1oz Onion - chopped

  8. 1/2 teaspoon 2 1/2ml Cumin

  9. 1/2 teaspoon 2 1/2ml Chili powder

  10. 1/2 teaspoon 2 1/2ml Oregano

  11. 1/4 teaspoon 1 1/3ml Salt

  12. 1/8 teaspoon 0.6ml Pepper

  13. 1/2 cup 73g / 2.6oz Cheddar cheese - nonfat

  14. 1/2 cup 118ml Mozzarella chese - fat free

  15. 2 Bread slices - cubed

  1. Preheat oven to 375F.

  2. Lightly spray 1 1/2 quart casserole with Pam.

  3. In a large non-stick skillet, saute onion, garlic and eggplant. Cook, stirring frequently, 10 minutes.

  4. Remove from heat.

  5. Add remaining ingredients, mix well.

  6. Spoon mixture into prepared casserole.

  7. Bake covered 30 minutes.
