  2. TAHINI-MISO SAUCE

  6. 1 tb Oil

  7. 3 tb Whole wheat pastry flour

  8. 1/4 c Tahini

  9. 1 1/4 c -- water or vegetable

  10. stock

  11. 2 tb Miso

  12. Heat the oil in a small saucepan. Add the flour and cook, stirring constantly, until the flour is lightly

  13. browned and begins to give off a nutty aroma.

  14. Remove the pan from the heat and stir in the tahini.

  15. Add a small amount of water and stir vigorously to

  16. form a paste.

  17. Return th epan to the heat and slowly add the

  18. remaining water. Stirring continuously, cook the sauce

  19. until the desired consistency is reached. If the sauce

  20. is too thick, add a little water.

  21. Remove from the saucepan from the heat and add the

  22. miso. Stir well.

  23. Variation:

  24. Saute 1/2 cup of finely chopped onion in the oil

  25. before adding the flour. Mix well and proceed as

  26. indicated above.
