  1. 1 lb 454g / 16oz Pork - cubed

  2. 1 lb 454g / 16oz Beef - cubed

  3. 5 Peppercorns

  4. 1 Garlic

  5. 1 Sweet chocolate

  6. 1/2 Onion

  7. 1 teaspoon 5ml Oregano

  8. 2 Cloves

  9. 8 Vinegar

  10. 1/2 teaspoon 2 1/2ml Thyme

  11. 1 Cinnamon

  12. 1 Cumin

  13. 2 Tomatoes (large)

  14. 1 Fresh ginger - up to

  15. 2 Chili anchos - seeds and veins removed, sauteed in oil

  16. 2 Bay leaves

  17. Salt to taste

  18. Oil for frying

  19. Water

  20. Garnish

  21. 1/2 Onion - diced

  22. Corn tortillas

  1. Allow the meat to soak in enough water to cover during half an hour to clean it. Drain.

  2. Grind all the ingredients except for the bay leaves and strain.

  3. Fry the meat in the bottom of a pressure cooker with a little oil. Add the sauce, the bay leaves and 1 1/2 cups of water, cover and cook until meat is tender.

  4. Once done, open the pressure cooker and adjust seasonings. If the sauce seems too thin, bring to a boil and reduce.

  5. Serve hot with the chopped onion and corn tortillas.
