  1. 2 lbs 908g / 32oz Spanish or other mackerel fillets

  2. 2 tablespoons 30ml Lemon juice

  3. 1/2 cup 73g / 2.6oz Grated parmesan cheese

  4. 1/4 cup 49g / 1.7oz Butter or margarine - softened

  5. 3 tablespoons 45ml Mayonnaise or salad dressing

  6. 3 tablespoons 45ml Chopped green onions

  7. 1/4 teaspoon 1 1/3ml Salt

  8. 1/8 teaspoon 0.6ml Hot pepper sauce

  1. Recipe Instructions Place fillets in a well-oiled or greased bake-and-serve dish. Brush fillets with lemon juice and let stand for 10 minutes. Combine parmesan cheese, butter, mayonnaise, onions, salt and hot pepper sauce. Mix well and set aside. Broil fillets about 4 inches from heat source for 6 to 8 minutes. Remove from heat and spread cheese mixture over the fillets. Broil for 2 to 3 minutes longer until lightly browned. Serve immediately. This recipe yields 6 servings.
