  1. 1 cup 198g / 7oz Butter or margarine

  2. 2 cups 396g / 13oz Sugar

  3. 4 Eggs

  4. 2 cups 125g / 4.4oz White self-rising flour

  5. 1/3 cup 78ml Fresh lemon juice

  6. 2 tablespoons 30ml Lemon peel - grated

  7. Lemon Glaze

  8. 1 cup 198g / 7oz Confectioners sugar

  9. 2 tablespoons 30ml Lemon juice

  1. Preheat oven to 375F. Grease bottom of 13 x 9-inch pan.

  2. In large saucepan, melt butter over medium heat; remove from heat.

  3. Stir in remaining ingredients except glaze in order listed, mixing well after each addition.

  4. Spread batter in prepared pan.

  5. Bake at 375F for 35 to 45 minutes or until top is golden brown.

  6. Cool 10 minutes; drizzle with glaze.

  7. Makes 48 bars.

  8. Lemon Glaze: Combine 1 cup Confectioners' sugar and 2 tbs lemon juice; stir until smooth.
