  1. 2-1/2 cups green split peas (16 oz. pkg.)

  2. 2-1/2 cups lentils (16 oz. pkg.)

  3. 2-1/2 cups pearl barley (16 oz. pkg.)

  4. 2 cups alphabet macaroni (8 oz. pkg.) or brown rice

  5. 1 cup dried onion flakes (2 3/8-oz. pkgs.)

  6. 1/2 cup celery flakes (1 3/8-oz. pkg.)

  7. 1/2 cup parsley flakes (1 1/4-oz. pkg.)

  8. Optional:

  9. 1-1/2 teaspoons thyme

  10. 1-1/2 teaspoons white pepper

  11. (Makes 10 cups of mix.)

  12. Mix all ingredients together. Store in a jar with a tight fitting lid. Stir before using.

  13. Palouse Soup

  14. Stir contents before using.

  15. 1 cup of soup mix with

  16. 4 cup of water or seasoned stock in large pan. Add

  17. 1 cup of cooked chopped meat, if desired. Bring to a boil. Reduce heat to low and cover pan. Simmer gently for 45 to 60 minutes, or until peas are tender. Add

  18. Minestrone Variation:

  19. 1 cup of soup mix with a 16-oz. can of stewed tomatoes,

  20. 2 to 3 cups of water or stock,

  21. 1 chopped carrot,

  22. 1 to 2 chopped potatoes, and 1/2 teaspoon basil. (Optional: 1 clove minced garlic). Bring to a boil. Reduce heat to low and cover pan. Simmer

  23. 45 to 60 minutes or until peas are tender. Add

  24. 1/2 teaspoon of salt, if desired.
