  1. Ingredients (serves 4)

  2. 600g lamb mince

  3. 3 shallots, trimmed, sliced

  4. 3 tbs chopped fresh coriander

  5. 3 tbs chopped fresh mint

  6. 4 soy and linseed bread rolls, halved (or any grain bread of your choice)

  7. 30g snow pea sprouts

  8. 2 small carrots, peeled, coarsely grated

  9. 2 small beetroot, trimmed, peeled, coarsely grated

  10. Tzatziki, to serve

  1. Place the mince, shallots, coriander and mint in a bowl. Use your hands to combine . Divide into 4 portions. Shape each portion into a patty.

  2. Heat a non-stick frying pan over a medium heat. Add the patties and cook for 4-5 minutes on each side or until cooked through. Toast the cut side of the rolls .

  3. Top the base of the rolls with the snow pea sprouts, grated carrot and beetroot. Place a patty on top and add a dollop of tzatziki. Place bun lid on top to serve.
