  1. 3 1/2 c All-Purpose Flour; unsifted

  2. 2 tb Sugar

  3. 1 ts Salt

  4. 1 pk Active Dry Yeast

  5. 1 c Water

  6. 1 tb Margarine

  7. 1 tb Water

  8. 1 Egg Yolk; beaten

  9. Coarse salt

  1. Mix 1 cup flour, sugar, salt and undissolved yeast.

  2. Heat 1 cup water and margarine to 120 to 130 degrees.

  3. Gradually add to dry ingredients; beat 2 minutes at medium speed of mixer.

  4. Add 1/2 cup flour.

  5. Beat at high speed 2 minutes.

  6. Stir in enough additional flour to make a soft dough.

  7. On floured board, knead 5 minutes.

  8. Set in greased bowl; turn to grease top.

  9. Cover and let rise in warm, draft-free place 40 minutes.

  10. Divide dough into 12 equal pieces.

  11. Roll each into a 20-inch rope.

  12. Shape into pretzels or other shapes.

  13. Place on greased baking sheets.

  14. Cover; let rest 5 minutes.

  15. Mix egg yolk and 1 tablespoon water; brush on pretzels.

  16. Sprinkle with coarse salt.

  17. Bake at 375 degrees 15 minutes or until done.

  18. Cool on racks.
