  2. 3 tablespoons lemon juice

  3. 1 carrot -- chopped

  4. 1 leek -- chopped

  5. 2 tablespoons firm butter

  6. 2 pounds rockfish or red snapper -- drawn

  1. Preparation : * Note: See the "Basil-Garlic Sauce" recipe which is included in this collection. Heat oven to 375F Mix Basil-Garlic Sauce, lemon juice, carrot, and leek. Cut butter into small pieces. Place in rectangular baking dish, 13- by 9- by 2-inches. Place rockfish on butter. Spread vegetable mixture over fish.
