  1. 1/4 C butter

  2. 1 1/2 C chopped onion s

  3. 1 C sour cream

  4. 1/4 tsp salt

  5. 1 C shredded sharp cheddar

  6. 1 10-12oz pkg corn muffin mix

  7. 1 egg beaten

  8. 1/2 C milk

  9. 1 C cream corn (8 1/2 oz can)

  10. red pepper sauce (Tabasco) to taste

  1. Melt butter in skillet, sauté onion until soft and transparent. Set aside and let cool.

  2. Add sour cream, salt, ½ c cheese to onion and mix.

  3. In a separate bowl, combine muffin mix, egg, milk, corn and pepper sauce. Stir until smooth.

  4. Spread batter in greased 8x8 or 9x9 pan. Spoon onion mixture over, then sprinkle the rest of the cheese over the top.

  5. Bake at 425° for 30-35 minutes
