  1. 6 (1/2-inch thick) bone-in pork chops

  2. 2 tablespoons vegetable oil

  3. 1 medium onion, chopped

  4. 1 (16 ounce) can kidney beans, rinsed and drained

  5. 1 (15 1/4 ounce) can whole kernel corn, drained

  6. 1 (10 3/4 ounce) can condensed tomato soup, undiluted

  7. 1 1/4 cups water

  8. 1 cup uncooked instant rice

  9. 1/2 cup sliced ripe olives

  10. 2 teaspoons chili powder

  11. 1/2 teaspoon dried oregano

  12. 1/2 teaspoon salt

  13. 1/8 teaspoon pepper

  1. In an ovenproof skillet, brown pork chops in oil on each side; remove an keep warm. In the same skillet, saute onion until tender. Stir in the remaining ingredients; bring to a boil. Place chops over top. Bake, uncovered, at 350 degrees F for 35-40 minutes or until meat is tender. ');
