  1. 2 Tbsp. Butter

  2. 2 small cloves fresh garlic, peeled and diced fine

  3. 1 medium red onion, diced fine

  4. 1 stalk celery

  5. 1/2 each red and green bell pepper, seeds removed and diced

  6. 1 bay leaf, whole

  7. 1 pinch of paprika and cayenne each 2-1/2 cups fresh diced tomatoes

  8. 1/2 cup chili

  1. Preparation : Cook the veggies in the butter until tender but not brown. Add the rest of the ingredients and simmer for about 15-18 minutes. Remove the bay leaf and serve over fresh fish or a bowl (1-1/2 pounds cooked) of steamed shrimp or crawfish tails.
