  1. Crockpot Tomato Sauce

  2. 2 tablespoons olive oil

  3. 4 medium onions, diced (2 cups)

  4. 3 medium carrots, shredded

  5. 1 medium green bell pepper, diced (1 cup)

  6. 2 cloves garlic, finely chopped

  7. 8 large tomatoes (8 cups), peeled and diced

  8. 1 can tomato paste, (6 ounces)

  9. 2 tablespoons packed brown sugar

  10. 1 teaspoon salt

  11. 2 teaspoons dried oregano leaves

  12. 2 teaspoons dried basil leaves

  13. 1/2 teaspoon pepper

  14. crock pot. Cook on high for 8 hours.

  15. Heat oil in skillet over medium heat. Cook onions, carrots, bell

  16. pepper, and garlic in oil, stirring occasionally, until tender.

  17. Place vegetable mixture and remaining ingredients in a 5 quart

  18. crock pot. Cook on high for 8 hours. When sauce is done, divide

  19. 2 cup portions and freeze for later use. Yields

  20. 11 1/2 cups
