  1. 1/2 cup cottage cheese

  2. 1/2 can condensed milk

  3. 1/2 envelope unflavored gelatin

  4. 2 tbsp. water

  5. 1/4 cup lemon juice

  6. 1/2 cup whipped topping

  7. 1 pie crust

  1. In blender combine milk, cottage cheese, and whipped topping. May use a bit more whipped topping for extra fluffiness.

  2. Pour mixture into a medium bowl.

  3. Melt 1/2 envelope unflavored gelatin with 2 tbsp. water in the microwave.

  4. Add 1/4 cup lemon juice to the gelatin mixture.

  5. Pour gelatin and lemon juice over cheese mixture and mix with wire whisk.

  6. Fold in 1/2 cup whipped topping into cheese mixture.

  7. Pour into pie crust. Refrigerate.
