  2. VIDALIA ONION PIE

  7. 2 9 Pie shells, baked

  8. 4 Eggs, beaten

  9. 1 c Sour cream (generous cup)

  10. Salt & pepper to taste

  11. 1 Stick of butter

  12. 6 Vidalia onions, large

  13. Sliced thinly 1/4 c Grated Parmesan cheese

  14. 4 Shakes of Tabasco sauce

  15. 1/4 c Grated cheese for top

  16. 1. Cook onions in butter until clear and soft (about 15 minutes),

  17. stirring often. Add all other ingredients. Mix and pour into the

  18. 2 baked pie shells.

  19. 2. Sprinkle grated cheese on top. Bake in 375F oven for 20 minutes, then

  20. 350F for an additional

  21. 40 minutes until lightly browned
