  1. 1/2 c Lard

  2. 3 Onions,med,coarsely chopped

  3. 2 Bell pepper(s)

  4. 2 Celery stalks,coarsely chop

  5. 1 T Jalapeno peppers,pickled

  6. 8 lb Beef chuck,coarse grind

  7. 2 cn Stewed tomatoes(15oz ea)

  8. 1 cn Tomato sauce(15oz ea)

  9. 1 cn Tomato paste(6oz ea)

  10. 8 T Red chile,hot,ground

  11. 4 T Red chile,mild,ground

  12. 2 t Cumin,ground

  13. 3 Bay leaves

  14. 1 T Hot pepper sauce,liquid

  15. Garlic salt(to taste)

  16. Onion salt(to taste)

  17. Salt(to taste)

  18. Pepper,fresh grnd(to taste)

  19. 4 oz Beer

  20. Water

  1. Heat the lard in a large heavy pot over medium-high heat.

  2. Add the onions, peppers, celery, and jalapenos.

  3. Cook, stirring, until the onions are translucent.

  4. Add the meat to the pot.

  5. Break up any lumps with a fork and cook, stirring occasionally, until the meat is evenly browned.

  6. Stir in the remaining ingredients with enough water to cover.

  7. Bring to a boil, then lower the heat and simmer, uncovered, for 3 hours.

  8. Stir often.

  9. Taste and adjust seasonings. ~
