  1. 2 Tomatoes - peeled, seeded,

  2. 1 lb 454g / 16oz Mushrooms* - thinly sliced

  3. Salt - to taste

  4. Freshly-ground black pepper - to taste

  5. 1 teaspoon 5ml Minced fresh tarragon

  6. 1/4 tspn dried tarragon

  7. 1/2 cup 73g / 2.6oz Bread crumbs

  8. 2 tablespoons 30ml Butter

  9. 2 oz 56g Goat cheese

  1. * Alternate Mushroom: Common Store Mushroom, Shaggy Parasol Cover the bottom of a buttered 8- by 8-inch baking pan with the tomatoes. Layer the mushrooms on top. Add the salt, pepper, and tarragon.

  2. In a small saute pan or skillet, slowly brown the bread crumbs in the butter and then add this mixture to the mushrooms. Crumble the cheese on top and bake in a preheated 400 degree oven for 20 minutes.

  3. This recipe yields 4 side dish servings.
