  1. 1 Pineapple chunks - (8 oz) Water - as needed

  3. 4 teaspoons 20ml Cornstarch

  4. 1/4 cup 59ml Vinegar

  5. 1 tablespoon 15ml Soy sauce

  6. 1/2 Green or red pepper - cut into 3/4" cubes

  7. 1/4 cup 15g / 1/2oz Sliced green onions Hot Poached Halibut

  8. 1 1/2 lbs 681g / 24oz Halibut steaks - thawed if necessary

  9. 2 Onion slices

  10. 2 Lemon slices

  11. 4 Parsley sprigs Several peppercorns

  1. Recipe Instructions Drain pineapple; reserve syrup. Add water to reserved syrup to equal 1 cup. Combine with sugar, cornstarch, vinegar and soy sauce. Cook and stir until thickened. Add pineapple, peppers and green onions; cook 1 minute longer. Serve over poached halibut. Poached Halibut: Cover halibut with boiling, salted water. Add onion, lemon, parsley and peppercorns. Simmer, covered, allowing 10 minutes per inch of thickness measured at its thickest part, or until halibut flakes when tested with a fork. This recipe yields 4 servings.
