  1. 6 medium-ripe Bosc pears -- peeled, cored and -- cut into 1/2-inch -- cubes

  2. 4 cloves garlic -- minced

  3. 1 cup pear -- apple, or white -- grape juice

  4. 3 tablespoons light brown sugar

  5. 1/4 cup extra-virgin olive oil

  6. 1 tablespoon fresh lemon juice

  7. 1 1/2 tablespoons coarsely chopped fresh rosemary Salt and freshly ground pepper to taste

  1. Preparation : Combine the pears, garlic, juice and brown sugar in a medium saucepan. Bring to a simmer over medium-high heat. Continue simmering, uncovered and stirring occasionally, until the pears are mushy and most of the juice has evaporated, about 25 minutes. Puree the pear mixture in a food processor fitted with the steel blade. With the machine running, pour in the olive oil through the feedtube to make a smooth and creamy puree. Season the puree with the lemon juice, rosemary, salt and pepper.
